Log Daily Refresh Results into New Table

So, ultimately my goal is to have the daily refresh data logged somewhere, so I can report on the data that I'm reporting on. Sounds dumb, but anyway. I am aware this is something that Power Bi isn't "built" for. But I'm looking to see if there's been anyone who has found a way to make this happen.

If it's remotely helpful, I do have the add in for excel and power bi. I just can't figure out how to make excel accomplish this either.

Any advice is appreciated!

What is the source of the data? Can you provide a sample of input data and expected output of this daily log?

I have an OData feed from Jira into PowerBi Desktop, does that help? Lol.

It's hard for me to included details since I'm very new to Power Bi.
