I have a Moses based on excel spreadsheets but we have updated all data to SharePoint lists and SharePoint folder documents.
when I pull in the SharePoint list it gives me many columns of data, of which many can be expanded multiple times.
Is there an easy solution or do I have to rebuild the model?

There is no easy solution. Swapping a data source is a very fragile process with high risk of meta data loss (groups, measures etc). Make sure you have a backup of your report file before you attempt this.

Is there a good way of buildling a new report with the same data/format? A Good practice?
You can copy/paste between Power BI Desktop files. That includes queries, visuals, and pages.
You can also use templates (PBIT) to recreate report structures.
