I want my slicer to select the last value of a date column by default, while giving the opportunity to choose an alternative date to choose from.
How do I do this?

It's a pity that Power BI still doesn't support to set a "latest date" default value for a slicer currently. You can vote up the corresponding idea at Default Selected Slicer or Tile-By Value Configuration
From the comment area of above idea, one user menthions a custom visual Preselected Slicer. You may give it a try to see if it can meet your need.
