Hello, Please can you tell me how to stop users being able to highlight data within graphs, as one has done below? (I'd like to keep the tooltips that display the values when hovered over though) ...

It seems that what you are creating is line and column chart, please navigate to Format pane to toggle off the option "Markers". Later check if it can disable the highlight data...
