You cannot change the datesource from PowerBI Dateset to Databricks directly, but you can add the Databricks to the PowerBI desktop after changing the import mode.
Click the 'change the mode' on the lower right corner of Power BI Desktop to change the mode to direct query
Then you can add the new source to Power BI desktop, and you can add the Databricks to the Power BI Desktop first, then delete the orignial datasource to replace it.

Yes, seeing no reponse on this post, I had also implemented similar solution:
- Connected to Databricks and brought the data model into PBI desktop.
- Deleted the PBI dataset tables from PBI desktop.
- Renamed the databricks tables/columns to match with existing measures and report(in case if any dicrepancy)
- ....and its done ( FYI..I have not changed the mode)
