I have a full list of 24H intervals in 30 minutes and when I visualize this with a matrix it cuts off the bottom at 6:30P - how can I show the full amount of rows? This is important so the end-user looking at this doesn't have to scroll to see the additional data.

According to your description, here are my steps you can follow as a solution.
(1)Create a matrix visual to filter the first 24 pieces of data.
(2)Create a matrix visual and filter the next 24 pieces of data.
(3)Select the first matrix, hold down the [Ctrl] key to select the second matrix, and right-click to select the combination.
(4)Then the result is as follows.

@chillpill Smaller font? Or maybe make it hierarchical so that you only have to display hours at first so only 24 rows initially.

Smaller font works to a degree but not fully as it will show up to 1030P now. I like your idea about making hierarchical - any pointers on how I could go about doing that?
FYI my PQ has the Intervals calculated down to the half hour.
