How do I delete the extra column in this totals matrix?

Can you provide me more about the matrix's details? Maybe you can try again or you can go to the Format section. Expand the Totals option. Disable the Show on Rows and/or Show on Columns settings to remove the totals as needed.

Can you show us a picture of *everything* you have (maybe blur out some data) and point out where you need something removed?
Also, if the users are not going to be expanding, collapsing, or otherwise filtering the visuals, you can overlay one on top of another and hide portions.

If all you want to show is one value in one column and one row, use a Card visual, not a Matrix.

i am adding it the the end of an existing table so I need it to visually be the same, so you have another thought?
