I have a date field that has the short date plus 0:00 on the end when I export to Excel. I did go to the relationships editor and change the type of the field to just date but when I export the data from the visual I still get that 0:00 in the field. Because of this I am having trouble calculating the number of days in this field from Today()
Is there anything I can do to change this date type so that I can use it in an aging calculated column?
You can try add a new column with the formula DateOnly = INT(Deadline Date) and change the column type to Date, or go into PowerQuery and change the type there. When you load, it will default to show all times as 12am, but you can then simply change the format.

I am still getting an error when I try and use it in a viz:
OLE DB or ODBC error: Local evaluation of Table.Join or Table.NestedJoin with key equality comparers is not supported
based on the error message that is a different problem. This thread suggests that the issue is using Direct Query mode - so either change mode or use a different way to merge tables.
