I found a way to hide columns in a table visual without turning off text wrap or covering with another shape - I haven't seen this solution when I was searching so I thougth I would share!
Choose the Column you want to hide and "Rename for this Visual" to " " - you will see it show up like below
You can then adjust that column width in your display until it dissapears completely!
