How to Create a Waterfall Chart with Start and End Bars with the ability to allow users to pick?

I have a table like this:

I'd like to create a waterfall chart that has a start and an end bar to show the total for a month. Users are allowed to pick the start and end dates to compare bwtween any two periods. In the bars inbetween, I'd like to break down the changes by Part Category. The final chart should look like this:

This is a Simple Waterfall chart, users aren't allowed to pick the start or the end dates, and the middle bars are set and won't change. In a word, it's a static chart. I want a dynamic waterfall chart that allows users to pick the start and end dates and the middle bars will change accordingly.
