Hello everyone!
I am wanting to changed my table so that the date is the header row, and then the rest of the columns are beneath is with their headers on the far left like it's shown in this image below:
I've read you can unpivot columns, but would I unpivot every single column or is there a better way?

Does your table look like as below?
Here I suggest you to select [Date] column in Power Query Editor and then unpivot other columns.
Result is as below.

@Anonymous , Use option in Matrix - Switch Values on row or show values on rows
do not take anything on row, take month year on the column
or refer if calculation group can help for more complex display
