How do you add a field to the 'Tooltips'?
Say I have a table with Sales, and want the 'Profit' calculation (or measure with DAX) on the tooltips. How do you add that field to the tooltips? I've figured out how to get tooltips to show up, but not how to add stuff into them.

If you want tooltips on your table visual follow this steps:
1- Create a new page, and in canvas settings, change the type for tooltip like bellow:
Now your page will get smaller, just increase the zoom to fit in the page.
2- Create what you want to appear in the tooltip, in my example a created a bar chart with total sales by country:
3- Now go back to the page where you have the table visual and select it, and go to format pane, go to properties section, make sure that the tooltips are enabled, expand the tooltips in options type choose report page, and in the page field choose the created page for tooltip:
When you hover the table now, it should show the tooltip like bellow:

Yes, I did mention in my previous response that not all visuals support tooltip tile and those include matrices and tables. The tooltip option for these visuals are for a reprot page or for customization only.

Please see the screenshot below. Tooltip tile availability depends on the viz so not all visuals may have this option (tables and matrices).
For page tooltips, you will need to create a separate page which can contain another visual or visuals. If this is enabled, the page will overwrite the tooltip display so fields added to the tooltip tile will not be visible.

Doesn't appear on 'Matrix Tables' - so tables cannot have tooltips?

Just drop the measures to the tooltip field and automaticaly will appear whe you hover the visual:
