How do I adjust individual data label color?

Under datalabels is a button customize series. Turn that on to customize each bar.

If you are using a single chart visual like column chart, bar chart etc, I'm afraid you cannot change the data label color to different colors for each column currently. You can adjust the data label position to a favorable position like 'Outside end', change its color to fit the visual background:

If you are using the combo chart which is like clustered column and line chart etc, you can set the data label color to different for each type under the data label option:

In addition, here is an idea about conditional format data label colors in visuals, you can vote for it to help us improve power bi and make this feature coming sooner.
