I keep getting the error DataFormat.Error: We couldn't convert to Number. Details: UNK. The columns that I am getting these errors are set as text already. See below.

No that is the name of my query
So where are the columns coming from? Confused. Usually the source line actually references a source. Are you in the Query Errors when doing the View | Advanced Editor? You want to be on the original query when you do that.

Go to Edit Queries and select your table with errors and on right side click on Navigation:
And see if data is displayed as expected delete all steps below Navigation.

That seems to correct the errors. But when I unpivot my sales columns the errors return.

Just check your previous steps on the right side in Edit Query mode.
By default when data as loaded, power bi changes data types automatically so if you delete that step it might solve the problem. Alternatively click SOURCE on the right side and see if errors remains at loading stage or not. If yes then check the "#2016" table that you are referencing.
