In my organization we report Ireland and UK as a unique country with no disctionction = "Ireland-UK"
I would love to use a filled map which gather both countries. At the moment I only can manage to have Ireland OR UK bot not both of them consider as one unique country.
Would anyone have an advice ?

I don't think it is possible to do it currently, because the map may not be able to recognize the combined value "Ireland-UK" and resolve it into detail position.
In this scenario, I would suggest you to submit your requirements on Power BI Ideas to improve this feature for Filled Map.

FYI
I also finally found a work around:
Create a table listing all countries in column A (with UK and Ireland separate), report in column B same coutries exept UK-Ireland for both countries.
Then link tables with countries in column B and have location field fill with coutries in column A.
Data will be same for thoses two countries and be considered as "one region".
