I have a field paramater that I use as a customisable hierarchy for a matrix.
What I would like is a way to add a label when multiple items are selected, this would show the order for the hierachy, so if account code was selected first it would be 1, or if cost centre was selected first this would be 1 and the other 2

That cannot be done. Power BI recognizes the selected items but does not retain the order in which they were selected.
There is no way to detect the selection order of field parameters. Only power bi knows, and not available to vertipak engine

The order in wich the fields appear are the correct order of the selection you cannot however check what is the selection order in terms of DAX context or similar, at least to my knowledge. I do not belive that is for now possible to do this highlight has you refer.
