Although I don't recommend it (and didn't confirm it), but you could accomplish this by dynamically prefixing the column names with a variable number of zero-width spaces based on their position in Table.ColumnNames. However, that would complicate writing measures (e.g., manually typing in column names, but you could pick them from the list correctly).

@rdumbre the field list is sorted alphabetically. If you want it changed, you would need to rename the fields in order of your source data.

Based on my observation you are asking for custom sorting in Power BI Desktop UI which seems not possible. Custom sorting can be implmented on visuals only when you are developing report.
