You can download the sample data and related videos for Enhanced Scatter from the link below, which can help you customize colors and use shapes correctly.
In the visual, you can set the colors for each category in the Legend under Data colors; whatever color you set, that color will be displayed.
You may also consider adding a color column and placing it into Customized Color to display the corresponding color.
Place the created [Shape] column into Shape.
