Is there a way to be able to drill down into the data points of a table so that you can see the data behind the aggregated totals in the table and more importantly control what fields it shows when you click through.
EG in the below table I want to be able to click on the number 13 and see a table that shows some fields of my choosing about those 13 customers

According to your description, I create a sample.
Then create a visual to count names of each DBS Check Category.
If you want to drill through to the corresponding detailed names, create a new page, put Name in a visual and put DBS Check Category in the drill through field.
Then after right-click drill through, you can see the corresponding names.
I attach my sample below for your reference.
