Is anyone aware of a way to disable the default summarization feature? I almost always create my own measures and have no need for any kind of default summarization.

In the Modeling tab you can set the default summarization per column, but I get the sense you are talking about making the Default Summarization "Don't summarize" instead of Sum for example. That, I do not believe you can control.
Way late on this one. It the issue is the manual process you can use the ctrl and shift keys to select multiple and manipulate the summarization setting. Saves a bunch of time vs going line by line.
