Is there way I can restrict the list of data fields in visual level filters to only few which are required for my reporting
and not all the data fields which are added to Rows or columns?
For example, if I have around 12 data fields added to column and Rows, I am getting all these 12 data fields added by default to visual level filters. But what I may need is only 2 out of 12 data fields for filtering and I dont want the extra 10 data fields also showing up in visual level filters.

It seems that there is no option for us to disable or remove the unnecessary visual level filters ccurrently in Power BI.
For a workaround, you could select Advanced filter which could show the data filters you need.

If I understand your question correctly you could set the column that you want to filter as a page or report level filter, depending if you want this to be for just the selected page or entire report. You can then set the filter to the 2 values that you require and all visual level filters on that page will only show those 2 selections available for filter.
