I have a matrix table with dates as the column headers. Currently, they are in the order of 2021, 2022, 2023, and then 2024.
Is it possible to have these column headers to go 2024, 2023, ect... If so, how can I make these changes?

Yes, you can create sort column with pq like :
This column will allow you to reverse-sort sort order
