I'm guessing/hoping its something really simple but my dates are appearing as texts and I can't just convert into Dates, it errors.
This is what it looks like in Excel:
and yet in Query Editor it appears like this:
Updating the data type to 'Date' just errors:
Please tell me there is a simple solution to this?

Try this. First convert your columns to Whole Number, then add a new step converting them to date. If not, you can add your integer number of days to #date(1899, 12, 30).
= #date(1899,12,30) + #duration([DateIntegerColumn],0,0,0))
