Hello All,
The slicer already sets the min and max date from the column pointed.
But,
the end user is able to select any date from calendar dropdown.
Can I restrict the end user? I need that field to be invisible, or at least not pickable.

Based on my test, I created a date table only contains date from 3/1/2020 to 3/8/2020, yet i still can select date between 3/1/2020 or after 3/8/2020 from calendar dropdown.
I'm afraid we can't restricting min and max date for calendar dropdown currently but I'd like to suggest you to submit this as an idea through the below link.

I did so and you can restrict the "initial" dates, that's right. And people see what I want but they still can change the dates, even if that date interval doesn't have any data.
When you click on it, you can go back like 20 years ago. I cannot see any restriction for "not being able to select date". Maybe it's something easy but I cannot find it.

As @MFelix suggests, you can restrict the dates using the filter pane. If you don't want users to meddle with the filter on the filter pane, there is an option to either hide or block the filter:
If you want the visual to display data with no blanks, you can add the measure to the filter pane and select "is not blank":

Sorry if my explanation was vague.
1- I need a date slicer, must be "between" style. This is a must asked by the customer.
my data starts from 1st October 2019 and when I add the field it automatically sets the earliest date, that's fine.
I also added the filter as you suggested.
2) I save it (I'm on desktop), I push it to the online service and everything is fine.
I open the report, I see the dates correct. Until I click on the slicer; as you can see I'm able to select before the earliest date set by me. This screenshot is from browser, user interface.
End user: "If I'm able to select, I want my report to start from that date. If I don't have the data, I don't want to be able to select, it confuses me because I'm end user not a nerd"
Long story short, my starting date shouldn't be able to be changed, which is 1st October 2019.
eg. 2nd October 2019 is okay, July 2015 is not okay.

Here is an example including a slicer. I have restricted the dates in both the slicer and the visual using the filter on the filter pane (the settings in Desktop):
And how this is rendered in the service:
As it is, you can actually select a previous date in the slicer (so I see what you mean), but since the visual is also resctricted it won't affect the visual. (In my opinion, if there is a filter on the date slicer, you shouldn't be able to select dates outside the values set in the slicer. But at the moment, that seems to be how it works- looks like a bug to me!).
