I want to calculate the total for the day by subtracting the previous days total minus the current days total
So, you're just looking for a delta from the previous day? I would recommend using a measure for this.

Day Total = SUM( Data[Value] )
Previous Day Total = CALCULATE( [Day Total] , PREVIOUSDAY( 'Date'[Date] ) )
Delta Previous Day = Data[Day Total] - [Previous Day Total]
