Ive created a shared dataset and the dataset contains multiple model views. However when users connect to the dataset they only get the initial view containing all the tables of data. very confus...

If you have Pro account you could try to open a support ticket. If you have a Pro account it is free. Go to https://support.powerbi.com. Scroll down and click "CREATE SUPPORT TICKET".
