Yes I know there are tons of posts about this topic but none of them appear to be helpful for me.

State use color saturation. I then read that this was replaced. That all i have to do is go to format > Data COlors and advanced or what not. But I don't see any options for color saturation or anything else. So can someone please point me in the right direction?

I had difficulty with this as well. If you click the dropdown on "Data color" in the Format tab, to the right of "Default color," there should be a small, light-colored, vertical elipses. So easy to miss. From there, you should be able to use conditional formatting. You can then change the color scale to whatever you like based on your field. In the photo I attached, you can't see the three dots since I can't hover over the area and take a screen capture at the same time.
