Please try this measure:

Sum Waste Following Day = 
CALCULATE (
    [Sum Waste],
    FILTER (
        ALLSELECTED ( Transaktions ),
        Transaktions[Date]
            = MAX ( Transaktions[Date] ) + 1
            && Transaktions[Transaktion] IN FILTERS ( Transaktions[Transaktion] )
            && Transaktions[ShopID] IN FILTERS ( Transaktions[ShopID] )
    )
)
