Helper I
When multiple fonts are specified, it allows the system to try to use them in order of priority. First it tries helvetica, then arial, and the sans-serif. It fails-over to the second and then third ones if it can't find the previous font(s).
Generally, all operating systems have an internally-defined font that is the default for sans-serif and another one that is defined for serif. This way, no matter what, if you have serif or sans-serif at the end of a list of fonts like that, it will always have that font to fail-over to.
