Does anyone know if it's possible to change the default grey colour of the gauge to another colour?

It doesn't appear that you can, but you might try adding the Tachometer visual. Used it before and I think that would meet your need.

To simplify what is stated on the post.
Step 1: Go to View-> themes, select: Customize current theme.
Step 2: Change one of the color on your default. For simplicity change Sentiment color neutral to orange or other shade of yellow.
Step 3: Go to themes and select: Save current theme. (This will create a JSON file with a name you give)
Step 4: Open the JSON file and add (,"backgroundLight":"#D64550") with desired color on background light.
Step 5: Go to themes and select: Browse from themes and load the JSON you modified which inturn will change the Grey color to color you select.

Solved:
Go to the themes and Edit Theme.
In Power BI desktop, if you go to View > Themes (dropdown) > Customize current theme, then on the Name and Colours section go to Advanced > the Gauge colour we are talking about (on mine at least) is the Third-level elements dropdown. Not sure how this will affect your other visuals, but I am only using Gauge on a single page report and it worked.
