How can I change the data order at the chart, without using the value or alphabetical order?
I would like to have: "Vencido"; "Entre 1 e 30 dias"; "Entre 31 e 60 dias"; "Entre 61 e 90 dias"; "Entre 91 e 120 dias" and "Acima de 120 dias"

Here is a blog post that will walk you through how to do this: https://www.seerinteractive.com/blog/reorder-powerbi-legend/
To summarize: You will have to create a new table that contains your category names and a number that you can sort by, then link the tables together and create a new column from that relationship. The blog post has a lot of detail about how to do this.
