Can Tooltip be put back to a previous version?

It appears to be more of a formatting issue than the tooltip itself. The first visual has alternating row colors which is the default while the second uses the non preset. Also, the column header and grid line colors of the total section appear to have been changed as well.

From the looks of the data, I feel that this has got something to deal with Premier League scores. So I have downloaded a sample data containing match dates, home team, away team, home team goals, away team goals and match result.
Then in the table visual, I have added the date, away team, the jome goals, away goals and result. I am assuming that you want the home team to appear at the top
A - Click the table visual > Format Pane > Enable title
B> Expand the Title and click on the fx button next to the Text
C > In the "What fields should we base this on ?" option, select the required fieldname to appear (I am assuming that it is the home team. The summarization can be kept as first
D> You can change the size and background and alignment of the title with the help of the subsequent buttons present:
I am not sure whether this is what you wanted. For a solid result, can you share a sample PBIX file.

this is the message that pops up, hence i am unable to resolve your issue. If at all you have your Power BI Desktop .pbix file, or atleast a sample data, I may be able to resolve it. If however you are using Power BI service, I may not be of much help at the moment
