I've created a rectangular button with an icon to the left of the label. The icon is too close to the text, but changing the padding setting has no effect whatsoever. I've tried putting spaces at the beginning of the button text, but that has no effect either. How can I put some spaces between the icon and the text?

Change the Icon Placement to "Custom" and play around with the alignment.

You can refer to @Bmejia reply in priority and if it didn't solve the problem, you can refer to the following methods.
Modify the alignment of Text and Icon at the same time, Text is set to right-aligned, Icon is set to left-aligned, and modify the size of Padding.
