Building lakehouse to save changes to SQL server?

I'm exploring lakehouse for an application but I'm not sure if it's possible (i'm not a data engineer). I have a SQL Server table that lists an order #, date, and status field. The status field and date gets updated, but no history is saved. Am I able to use the lakehouse to save off a version each time the data is updated? I see that it has a refresh button but I'm trying to create a history and not over write the data.
