I need to explain the origin, purpose of the different tables; how and why transformations are done in queries; how and why relationships are set up as is.

The Query Editor allows you to enter a description of each table. In addition, you can add comments into the Advanced Query Editor and the DAX Editor. Finally, you can use DAX Studio to assist you in documenting your model. While not a complete documentation, it at least gets you started in the right direction.
