Kmcdonald , the First option is to concatenate label off. Expand axis, sort on that concatenate label off

Here, is a 100 % Stacked Clustered Column Chart where you can put two different values (e.g: Open and Close) and also add category on legend for the stacks. You can change 100% to only stacked columns by selecting - under visual attributes > Bar Chart > All > From (None, Percent, Fraction) select None. Hope this helps you.
