I've been working for a year with a model, starting last week, every time I update the data, make changes in power query or do something simple like hidding fileds in the model view a "in process" pop up come in and Power BI stops responding and force closing it is the only solution, wich means I have to start again.
Tried unistalling and reinstalling from the Store and from the web (x64.exe), same issues. I treied opening older versions and also crreating a new file and recreating queries one by one, same result. On the new file, size is 1,800 kb so shuoldnt be a memroy, processing issue.
Have to deliver the file to my client and it's taking me days to do something it should take a couple of hours

You can try the following steps to troubleshoot the issue:
Disable Preview Features:
Go to File > Options > Preview Features, uncheck all enabled options, then restart Power BI.
Test with a New PBIX File:
Create a fresh PBIX file using the same data source to check if the issue is specific to your current file.
Clear Power BI Cache:
Go to File > Options > Data Load, and click Clear Cache to remove any corrupted or outdated cached data

You can try one more option to further investigate the issue by checking the crash logs. These logs may provide clues on what’s causing Power BI to freeze and will also be very helpful if you choose to contact Microsoft support.
You can find the logs here:(path might be little different in your system)
C:\Users\<YourUsername>\AppData\Local\Microsoft\Power BI Desktop\AnalysisServicesWorkspaces
Additionally, you can enable tracing in Power BI to collect more detailed logs:
File > Options and settings > Options > Global > Diagnostics > Enable tracing

Hello @HolmesMex,
Could you please try to disable hardware acceleration to rule out GPU-related crashes (File > Options > Global > Preview Features > uncheck “Enable hardware acceleration”) - then restart the app.
Based on my experience, this setting has been known to cause freezes, especially after updates.
If Power BI runs smoothly after this change, it confirms a compatibility issue with your graphics drivers.

I'm working with ver march 2025 in Soanish. I dont see that option in preview feature, Am I missing something?

After posting and before doing your steps, I realized I had installed Power BI helper. I uninstalled it and then followed your steps, Did 1 and 3 and started on copying query by query on a new file, no visuals. everythng was going fine until the 38th query, then it started again.

I solver the issue with the following steps, can't tell if all were needed or which one was the solution:
As the sayig goes, I dont have proof, but neither doubt, that it was the power bi helper that caused the file to crash.
