Add sorting to a matrix visual column

As the subject states I want to sort this by percentage descending.  The visual 3 dots doesnt seem to allow that, and I cant seem to find this option in the visual settings eaither?  Any help\ideas here.  I google search said add it into the tooltips but it doesnt exist for a matrix.  Also how can I add the columns that show 0% also, like Poor and Unsatisfactory?

Do you want to sort descending based on Excellent, Fair or Good? Because they will differ.

Anyway, easiest it to write 3 different measures, for each Excellent, Fair and Good. Use these measures in your matrix, and this way you can pick one of these to sort.
