Add extra column to the matrix

Can you not simply drag a field from the Fields list to the "Add data fields here" part of the Visualization?

This is what i want to come up with. I have a line list of people and the date they were seen. i want to add a column for the target they have to meet. and then populate the daily reachas  seen in the month of march for example. Add another column to sum all the vallues with that period eg sum of number from Jan to March and call it Progress.
