Add column to calculate difference in Matrix

Hello,

I have a rather simple question but I'm trying to create an additional column within my matrix to showcase the difference between two values. Ideally if I could create two columns one of which showcases the numerical difference and the other showcases the % difference that would be perfect. Also if it can be sortable from highest to lowest that would be perfect. 

*I'm using ReferralStartQuarter as the Columns, ReferredPatientsTotal as the Values.

I am attaching another file. When you select 1 period and want to show the names of two periods and have diff between that 2 periods. Check page 26
