Version 1: Simple & Direct
To change the date display, go to the Visualizations pane.
Click the arrow next to your date field and select the standard date field instead of the "Date hierarchy."

The issue is not realted to bucket, but it is because you added the total(the value in $) in the rows instead of values (in your matrix visual)
