I created a Folder connection to an on-prem file share. The connection was created successfuly and shows "online" when I check status. When I go to create a data factory pipeline and copy data from there, I am not seeing the connection as an available source in OneLake Data Hub. I am the use that created the connection and can see other connections I created - just not this one. Any ideas? Do I have to create the conneciton again in the workspace?

As you said, being able to correctly create connections to local folders in the data pipeline using copy activity. But what do you mean by Copy Data Assistant, can you provide relevant screenshot information and describe it?

If I create a copy activity (not the copy assistant), then I can select the Folder connection in the copy activity source settings. It is jut not available in the Copy Data Assistant - seems like a bug.
