How do I flag past due date?

We are currently building a dashboard to help us plan out a process. The process has 5 steps and 5 different suggested dates we track towards: 

Interview (Submission date +3)

Initial Pull (Submission date +10)

Production Pull (Due Date -5)

Peer Review (Due Date -3)

Final Peer Review (Due Date -1)

We also have a field we capture that shows where we are in the process.

In Progress 

Peer Review

Final Review

I want to be able to flag any request that has a status that doesnt equal what it should be based on the current date. 

EX: If interview date is before today and status is not moved to Initial pull or greater then flag.
