I want to write expression that will give you an END date when you have the START date and you add varying days. Example...START date 12/10/21, 5 days from START would be END date 12/15/21.

You can simple add the days you need. If you are doing it in a calculated column then
End Date = TableName[Start Date] + 5
if its a measure then
End Date = MAX(TableName[Start Date]) + 5
