Could someone tell me what user metrics and analytics are provided to developers who list their custom visual on the Power BI store/appsource? E.g. Number of downloads, number of daily users etc.

You have the Insights section in the Partner portal that you can use to track page views and downloads of your listing:
This, at best, will tell you how many downloads you get from AppSource (including your sample workbook), but beyond that, it is not more detailed, so daily user count and suchlike aren't available. MS provides no additional partner-facing telemetry, to my knowledge. Assuming your visual isn't certified, you could potentially add your own, but you'd probably want to check/update your visual's privacy policy for these kind of comms if you do decide to add it.
Alternatively, you may be able to contact the custom visuaks team (pbicvsupport@microsoft.com) to see if there is anything specific they can provide if you need something in particular.
