Hi, We're creating a dashboard to keep track of some KPI's. We though about a kind of KPI card but can't find nothing like this, see picture added, any idea where to find or how to create it? ...

You can easily create this kind of visual using powerbi-visuals-tools.
Recently I created a course when I explained how to create a KPI Label like this one below. I can send you a link if you are interested.
