Does anyone know of any good Power BI Server Administration resources? I'm after so details referring to admin tasks after the Server has been installed and running.

what do you mean exactly? Do you read the docs from MSFT already? I think that is a good start:

Admin in a Day does what I was after.

Admin in a Day is more for the cloud Admin site I guess. If you still need sources for Report Server Administration let me know ;).
