I don't always want all of the data fields used to make a visual to display on the tooltip. A sort of custom tooltip function where I could hide certain fields from it would be really useful.

Agree with this! This particularly became an issue for me when using the ArcGIS map (or any map) visual. I don't want GPS coordinates or fields that are redundant to my legend within the tooltip. Being able to toggle or choose which fields appear in the tooltip would be great.
