Currently you can only set your whole model to Direct Query mode in PBI Report Server. They don't support the per table setting that is available on the cloud service and there have been no specific announcements about when or if this feature might come to Report Server, but there was nothing about this mentioned in the roadmap Microsoft put out for the first half of 2020.
