Should I use a shared dataset?
Myself and two other developers are working on building 3 different reports (three developers, three reports). The data being used in each report is from the same 7 tables, with each report having 1 unique table (8 tables total, each report has 1 table needed specifically for that report).
I'm wondering if it makes sense to have a single data set rather than each of us building a report with individual data sets?
Are there any major considerations I should think about before deciding on using individual or a shared dataset?

Yes, use a shared dataset and it should contain all your measures, otherwise you'll end up with three different versions of you model and waste a lot of time troubleshooting differences in your reports.
